1 lb smoked sausage (kielbasa or andouille), sliced
1 large head green cabbage (about 2.5–3 lbs), cored and chopped
1 large yellow onion, diced
4 cloves garlic, minced

Instructions
Step 1: Start by preparing your ingredients. Slice the smoked sausage into half-moon shapes about 1/4 inch thick. Core the cabbage and chop it into roughly 1-inch pieces. Dice the onion and mince the garlic.
Step 2: In a large Dutch oven or a heavy-bottomed pot over medium-high heat, add the sliced smoked sausage. Cook, stirring occasionally, until the sausage is nicely browned and some fat has rendered out, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside, leaving the rendered fat in the pot.
Step 3: Add the diced onion to the pot with the sausage fat. Sauté for 5-7 minutes until softened and translucent. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.
Step 4: Add the chopped cabbage to the pot. It will seem like a lot, but it will cook down significantly. Stir well to coat the cabbage with the onion, garlic, and sausage fat.
Step 5: Pour in the chicken broth and add the apple cider vinegar, brown sugar, smoked paprika, red pepper flakes (if using), salt, and black pepper. Stir everything together.
Step 6: Bring the mixture to a simmer, then reduce the heat to low, cover the pot, and let it cook for 20-25 minutes, or until the cabbage is tender. Stir occasionally to ensure even cooking and to prevent sticking.
Step 7: Once the cabbage is tender, return the cooked sausage to the pot. Stir well and cook for another 5 minutes, allowing the sausage to heat through and absorb all the delicious flavors.
Step 8: Taste and adjust seasonings as needed. You might want a little more salt, pepper, or a touch more heat from the red pepper flakes.
