4 cloves garlic, minced
1 tbsp fresh ginger, grated
3 green onions, chopped, divided
1/4 cup soy sauce
1 tbsp sesame oil
1 tbsp rice vinegar
1 tsp sugar
1/2 tsp red pepper flakes (optional)
1 tbsp vegetable oil
1.5 cups chicken broth
1/4 cup hoisin sauce
1 tbsp cornstarch
2 tbsp cold water (for slurry)
15 oz (425g) ricotta cheese
2.5 cups shredded mozzarella cheese, divided
1/4 cup grated Parmesan cheese
1 large egg
Salt and black pepper to taste
1 (12 oz / 340g) package square wonton wrappers (approx. 50–60 wrappers)
Instructions
Step 1: Prepare Your Dumpling Filling. In a large mixing bowl, combine the ground pork, finely minced garlic, grated fresh ginger, 2 of the chopped green onions, soy sauce, sesame oil, rice vinegar, a pinch of red pepper flakes (if desired), and a teaspoon of sugar. Use your hands to thoroughly mix the ingredients until well combined.
Step 2: Sauté the Aromatics and Meat. Heat 1 tablespoon of vegetable oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned ground pork mixture and cook, breaking it up with a spoon, until it’s browned and cooked through. Drain any excess fat.
Step 3: Build the Sauce Base. To the same skillet with the cooked pork, add the chicken broth, hoisin sauce, and a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water). Bring to a simmer, stirring constantly, until the sauce thickens slightly.
Step 4: Prepare the Creamy Layer. In a medium bowl, whisk together the ricotta cheese, 1/2 cup of shredded mozzarella, grated Parmesan cheese, one large egg, and a pinch of salt and black pepper.
Step 5: Assemble the Dumpling Lasagna. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish. Spread a thin layer of the meat sauce mixture on the bottom of the baking dish.
Step 6: Layer the Wonton Wrappers. Arrange a single layer of wonton wrappers over the sauce, overlapping slightly if necessary, to cover the bottom of the dish.
Step 7: Add Meat and Cheese Layers. Spread half of the remaining meat sauce evenly over the wonton wrappers. Dollop half of the ricotta cheese mixture over the meat sauce, then sprinkle with 1 cup of shredded mozzarella cheese.
Step 8: Repeat Layers. Place another layer of wonton wrappers, then the remaining meat sauce, the remaining ricotta mixture, and another 1 cup of shredded mozzarella.
Step 9: Final Topping and Bake. Top the last layer of wonton wrappers generously with the remaining 1.5 cups of shredded mozzarella cheese. Cover the baking dish loosely with aluminum foil. Bake for 30 minutes.
Step 10: Brown the Cheese. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted, bubbly, and lightly golden brown. Let the Dumpling Lasagna rest for 10-15 minutes before serving. Garnish with the remaining chopped green onion if desired.
Notes
For best results, allow the Dumpling Lasagna to rest for 10-15 minutes after baking. This helps the layers set and makes for cleaner slices. This dish is great for meal prep and reheats wonderfully!
