Ingredients
4 Earl Grey tea bags or 4 tsp loose-leaf tea
1 cup hot water (just off the boil)
1/2 cup dried tapioca pearls (boba)
2 tbsp brown sugar or honey
1 cup whole milk or oat milk
2 cups ice cubes
Extra syrup for drizzling (optional)
Instructions
Step 1: Brew the tea concentrate by steeping the Earl Grey tea in 1 cup of hot water for 5-7 minutes. Remove tea bags and let the liquid cool to room temperature.
Step 2: Bring a medium pot of water to a boil. Add the tapioca pearls and cook according to the package instructions (usually 5-10 minutes until they float and soften).
Step 3: Drain the pearls and rinse them briefly under cold water. Transfer them to a small bowl and stir in the brown sugar or honey while they are still warm.
Step 4: Divide the sweetened tapioca pearls into two large glasses. Add a generous amount of ice to each glass.
Step 5: Pour the cooled Earl Grey tea over the ice, followed by the milk. Stir well with a wide boba straw and enjoy your homemade earl grey bubble tea recipe.
Notes
For a stronger tea flavor, steep the tea bags in the fridge overnight in cold water for a cold-brew concentrate.
