Ingredients
4 boneless, skinless chicken breasts (about 1.5 lbs)
1 (10.5 oz) can cream of chicken soup
1 cup chicken broth
1 package (6 oz) stuffing mix (your choice)
Salt and pepper to taste (optional)
Instructions
Step 1: Place the boneless, skinless chicken breasts in the bottom of your slow cooker. Season lightly with salt and pepper if desired.
Step 2: In a medium bowl, whisk together the cream of chicken soup and chicken broth until thoroughly combined and smooth.
Step 3: Evenly sprinkle the dry stuffing mix over the chicken breasts in the slow cooker.
Step 4: Pour the cream of chicken and broth mixture over the stuffing, ensuring it’s distributed well to moisten the stuffing.
Step 5: Cover the slow cooker and cook on the LOW setting for 4-6 hours, or on HIGH for 2-3 hours, until the chicken is tender and cooked through to an internal temperature of 165°F (75°C).
Step 6: Once cooked, use two forks to shred the chicken directly in the slow cooker. Stir the shredded chicken into the stuffing mixture until well combined.
Step 7: Serve hot and enjoy this comforting, easy meal!
Notes
For extra flavor, consider adding a dash of dried poultry seasoning or a sprinkle of fresh herbs like chopped parsley or chives before serving. You can also mix in a cup of frozen peas or corn during the last 30 minutes of cooking for added vegetables.
