Ingredients
1 lb dried Anasazi beans, rinsed
6 cups vegetable broth or water
1 large yellow onion, diced
3 cloves garlic, minced
1 tsp ground cumin
1/2 tsp smoked paprika
1 bay leaf
Salt and black pepper to taste
Fresh cilantro for garnish
Instructions
Step 1: Rinse the Anasazi beans thoroughly in cold water, removing any debris or small stones.
Step 2: In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Sauté the onion and garlic until translucent and fragrant, about 5 minutes.
Step 3: Add the rinsed beans to the pot along with the cumin, smoked paprika, and bay leaf. Stir to coat the beans in the aromatics.
Step 4: Pour in the vegetable broth or water. Bring the mixture to a boil, then immediately reduce the heat to low.
Step 5: Cover and simmer for 1.5 to 2 hours, or until the beans are tender. Check occasionally and add more water if the level gets too low.
Step 6: Once the beans are soft, season with salt and pepper to taste. Remove the bay leaf before serving.
Step 7: Serve warm, garnished with fresh cilantro.
Notes
For extra creaminess, mash a small portion of the beans and stir them back into the pot during the last 10 minutes of cooking.
