Easy Baked Potstickers with Thai Curry Sauce

Transform frozen potstickers into an extraordinary meal with a rich, creamy, and flavorful Thai red curry sauce. This fusion dish is quick, easy, and utterly delicious, perfect for a busy weeknight.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

24–30 frozen potstickers (pork, chicken, or vegetable)
1 tablespoon vegetable oil (for baking)
1 tablespoon vegetable or sesame oil (for sauce)
2–3 tablespoons Thai red curry paste (adjust to taste)
1 (13.5 oz / 400ml) can full-fat coconut milk
1 tablespoon brown sugar
1 tablespoon fish sauce
1 tablespoon fresh lime juice
Fresh cilantro, for garnish
Sesame seeds, for garnish (optional)

Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2: Arrange the frozen potstickers in a single layer on the prepared baking sheet, ensuring they are not touching. Lightly brush or spray with vegetable oil.
Step 3: Bake for 15-20 minutes, flipping halfway through, or until they are golden brown and cooked through.
Step 4: While potstickers bake, heat 1 tablespoon of vegetable or sesame oil in a medium saucepan over medium heat.
Step 5: Add the Thai red curry paste to the hot oil and sauté for 1-2 minutes, stirring constantly, until fragrant.
Step 6: Pour in the full-fat coconut milk and whisk until the curry paste is fully dissolved and the sauce is smooth. Bring to a gentle simmer.
Step 7: Stir in the brown sugar, fish sauce, and fresh lime juice. Taste and adjust seasonings as needed for your perfect Easy Baked Potstickers Thai Curry Sauce.
Step 8: Reduce heat to low and let the sauce simmer gently for 5-7 minutes, allowing it to thicken slightly and flavors to meld.
Step 9: Once potstickers are baked, you can either toss them directly into the warm Thai curry sauce or serve the sauce on the side for dipping.
Step 10: Garnish with fresh cilantro and optional sesame seeds. Serve immediately with rice or noodles and enjoy your delightful Easy Baked Potstickers Thai Curry Sauce!

Notes

For extra heat, add a pinch of red pepper flakes to the sauce. If you prefer a thinner sauce, add a splash of water or broth. This dish is fantastic with a side of jasmine rice or rice noodles.
