Ingredients
1.5 lbs beef ribeye or tenderloin, cut into 1-inch cubes
1 head of garlic, peeled and thinly sliced
3 tablespoons olive oil
2 tablespoons butter
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce or liquid seasoning
1 tablespoon oyster sauce
1 teaspoon paprika
Salt and black pepper to taste
Optional: 1 teaspoon red chili flakes
Instructions
Step 1: In a medium bowl, toss the beef cubes with paprika, half of the Worcestershire sauce, and a pinch of black pepper. Let it marinate for at least 10 minutes.
Step 2: Place the olive oil and sliced garlic in a large cold skillet. Turn the heat to medium-low and cook until the garlic turns golden brown and crispy. Remove the garlic chips and set aside.
Step 3: Increase the heat to high. Once the oil is shimmering, add the beef in a single layer. Sear for 2 minutes without moving them to develop a crust, then flip and sear for another 1-2 minutes.
Step 4: Pour in the remaining Worcestershire sauce, soy sauce, and oyster sauce. Add the butter and chili flakes (if using).
Step 5: Toss quickly for 1 minute until the sauce thickens into a glossy glaze. Remove from heat immediately to prevent the beef from overcooking.
Step 6: Transfer to a serving plate and top generously with the reserved crispy garlic chips. Serve hot over rice.
Notes
Always use a high-smoke point oil for searing. For the best results, do not crowd the pan with beef; cook in batches if necessary.
