Easy Bibimbap with Ground Beef Weeknight Bowl

A simplified, quick version of the classic Korean bibimbap, perfect for busy weeknights, featuring savory seasoned ground beef and an array of fresh, vibrant vegetables, all topped with a perfect fried egg and spicy gochujang sauce.

Ingredients

2 cups uncooked white or brown rice
1 lb lean ground beef
2 tbsp soy sauce
1 tbsp minced garlic
1 tsp sesame oil (for beef)
1 tsp sugar (for beef)
2 cups fresh spinach
1 large carrot, julienned or thinly sliced
1 small zucchini, julienned or thinly sliced
1 cup sliced mushrooms
4 large eggs
Sesame oil (for sautéing vegetables and eggs)
Salt and pepper to taste
For the Gochujang Sauce:
2 tbsp gochujang (Korean chili paste)
1 tbsp sesame oil
1 tbsp rice vinegar
1 tbsp sugar or honey
2 tbsp water
Optional garnishes: sesame seeds, sliced green onions

Instructions

Step 1: Cook Your Rice. Prepare 2 cups of white or brown rice according to package instructions. Set aside to cool slightly while you prepare the other components.
Step 2: Prepare the Vegetables. In a large skillet or wok, heat a drizzle of sesame oil over medium heat. Sauté the spinach with a pinch of salt until just wilted (1-2 minutes), then remove and set aside. Repeat this process for the julienned carrots, zucchini, and sliced mushrooms, cooking each until crisp-tender (3-5 minutes each). Set all vegetables aside separately.
Step 3: Cook the Ground Beef. In the same skillet, brown the ground beef over medium-high heat, breaking it up with a spoon until no pink remains. Drain any excess fat. Add the soy sauce, minced garlic, 1 tsp sesame oil, and 1 tsp sugar. Cook for another 3-5 minutes, stirring well, until the beef is fully cooked and well-seasoned.
Step 4: Make the Gochujang Sauce. In a small bowl, whisk together the gochujang, 1 tbsp sesame oil, rice vinegar, sugar or honey, and water until smooth. Taste and adjust sweetness or spice to your preference.
Step 5: Fry the Eggs. Heat a clean non-stick pan over medium heat with a little sesame oil. Fry the eggs sunny-side up or over easy, ensuring the yolks remain runny. Cook one egg per serving.
Step 6: Assemble Your Bowls. Divide the warm rice among 4 serving bowls. Artistically arrange separate portions of the cooked ground beef and each sautéed vegetable (spinach, carrots, zucchini, mushrooms) around the rice. Place one freshly fried egg on top of each bowl, in the center.
Step 7: Serve and Enjoy! Drizzle generously with the prepared gochujang sauce over the entire bowl. Garnish with sesame seeds and sliced green onions, if desired. Serve immediately and instruct diners to mix all the ingredients thoroughly before eating to combine all the wonderful flavors and textures.

Notes

Feel free to blanch vegetables instead of sautéing for an even quicker prep time. Adjust the gochujang sauce to your spice preference by adding more or less chili paste, or a touch more sugar/honey for sweetness. Leftover bibimbap components (excluding the egg) can be stored in the refrigerator for up to 3 days.
