Ingredients
6 cups fresh or frozen blueberries
1/2 cup granulated sugar (for filling)
2 tablespoons cornstarch
1 tablespoon fresh lemon juice
1 1/2 cups all-purpose flour
1/2 cup granulated sugar (for topping)
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cubed
1/2 cup milk
1 tablespoon coarse sugar (for sprinkling)
Instructions
Step 1: Preheat oven to 375°F (190°C). Lightly butter a 9×13 inch baking dish.
Step 2: In a large bowl, combine blueberries, 1/2 cup granulated sugar, cornstarch, and lemon juice. Toss gently to coat. Pour the mixture into the prepared baking dish.
Step 3: For the topping, in a separate medium bowl, whisk together the flour, 1/2 cup granulated sugar, baking powder, and salt.
Step 4: Cut the cold butter into small cubes and add to the dry ingredients. Using a pastry blender, two knives, or your fingertips, cut the butter into the mixture until it resembles coarse crumbs.
Step 5: Gradually add the milk to the flour mixture, stirring just until a soft, shaggy dough forms. Do not overmix.
Step 6: Drop spoonfuls of the dough evenly over the blueberry filling. Sprinkle the top with coarse sugar.
Step 7: Bake for 35-45 minutes, or until the blueberry filling is bubbly and the topping is golden brown and cooked through. If the topping browns too quickly, loosely tent with foil.
Step 8: Remove from oven and let cool for at least 15-20 minutes before serving. Serve warm with vanilla ice cream or whipped cream.
Notes
For best results, use fresh, ripe blueberries when in season. If using frozen, do not thaw them before adding to the filling mixture. A sprinkle of lemon zest in the topping can add an extra layer of brightness. Serve warm with a scoop of vanilla ice cream for the ultimate treat.
