Easy Brisket Fried Rice

A flavorful and quick easy brisket fried rice recipe that uses leftover smoked brisket and day-old rice for a perfect weeknight meal.

Ingredients

3 cups cooked jasmine rice (day-old and cold)
2 cups smoked brisket, diced into small cubes
2 tablespoons vegetable oil
3 large eggs, lightly beaten
1/2 cup frozen peas and carrots, thawed
1 small onion, finely diced
3 cloves garlic, minced
1 teaspoon fresh ginger, grated
3 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon toasted sesame oil
2 green onions, sliced (for garnish)
1/2 teaspoon black pepper

Instructions

Step 1: Heat a large wok or skillet over high heat and add one tablespoon of vegetable oil.
Step 2: Add the diced brisket to the hot pan and stir-fry for 2-3 minutes until the edges are crispy. Remove the brisket from the pan and set aside.
Step 3: Add the remaining tablespoon of oil to the pan. Sauté the onions, garlic, and ginger for about 1 minute until fragrant.
Step 4: Pour the beaten eggs into the pan. Scramble them quickly until they are just cooked through, then break them into small pieces.
Step 5: Add the cold rice to the pan, breaking up any clumps with a spatula. Toss the rice with the eggs and aromatics for 2 minutes.
Step 6: Return the brisket to the pan and add the peas and carrots. Pour the soy sauce, oyster sauce, and black pepper over the easy brisket fried rice mixture.
Step 7: Stir-fry everything together for another 2-3 minutes until the rice is heated through and slightly toasted. Remove from heat and stir in the toasted sesame oil.
Step 8: Garnish with sliced green onions and serve your easy brisket fried rice immediately.

Notes

Always use cold rice for the best texture. If your brisket is very salty, reduce the soy sauce by half a tablespoon.
