Ingredients
1 (18.3 ounce) package fudge brownie mix (not ‘cake-like’)
1/2 cup vegetable oil (or melted unsalted butter, cooled)
2 large eggs
1 teaspoon vanilla extract
1 cup chocolate chips, nuts, or sprinkles (optional)
Instructions
Step 1: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
Step 2: In a large mixing bowl, combine the brownie mix, vegetable oil (or melted butter), eggs, and vanilla extract.
Step 3: Mix with an electric mixer on low speed, or by hand with a sturdy spatula, until just combined. Do not overmix; the dough will be thick and sticky.
Step 4: If using, gently fold in any desired mix-ins such as chocolate chips, chopped nuts, or sprinkles.
Step 5: Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
Step 6: Bake for 8-11 minutes, or until the edges are set and the centers still look slightly soft and fudgy. They will continue to set as they cool.
Step 7: Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For extra gooey cookies, slightly underbake them. For a touch of sophistication, sprinkle with flaky sea salt immediately after baking. Store in an airtight container at room temperature for up to 3-4 days.
