Ingredients
2 pints (approx. 4 cups) cherry or grape tomatoes
3 tablespoons extra virgin olive oil
4 cloves garlic, smashed
1 teaspoon sea salt
1/2 teaspoon black pepper
1 teaspoon dried oregano or 3 sprigs fresh thyme
1 tablespoon balsamic vinegar (optional)
Fresh basil leaves for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C) and ensure the rack is in the center position.
Step 2: Wash the cherry tomatoes and dry them thoroughly with a kitchen towel to ensure they roast rather than steam.
Step 3: Place the tomatoes on a large rimmed baking sheet. Add the smashed garlic cloves, olive oil, salt, pepper, and dried herbs.
Step 4: Toss the ingredients directly on the pan until every tomato is well-coated in oil and seasoning.
Step 5: Spread the tomatoes out into a single layer, ensuring they aren’t overcrowded.
Step 6: Roast for 20-25 minutes, or until the tomatoes have burst and their juices are bubbling and slightly caramelized.
Step 7: Remove from the oven and drizzle with balsamic vinegar if using. Let cool for 5 minutes before serving garnished with fresh basil.
Notes
Try adding a pinch of sugar if your tomatoes are out of season and not very sweet. Store leftovers in an airtight container for up to 5 days.
