Ingredients
2–3 boneless chicken breasts, pounded or sliced thin
1 cup Cremini mushrooms, sliced
1/2 cup dry or semi-sweet Marsala wine
1/4 cup heavy cream (optional)
1/2 cup chicken broth
2 tbsp olive oil
2 tbsp butter
2 cloves garlic, minced
1/4 cup all-purpose flour (for dredging)
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
Fresh parsley, chopped (for garnish, optional)
Instructions
Step 1: Season the chicken breasts generously with salt, pepper, and garlic powder. Lightly dredge them in flour, shaking off any excess.
Step 2: Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Sear the floured chicken until golden brown on both sides, about 3-4 minutes per side. Remove chicken from the skillet and set aside.
Step 3: In the same skillet, add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter. SautΓ© the sliced Cremini mushrooms until they are browned and tender, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
Step 4: Pour in the Marsala wine, scraping up any browned bits from the bottom of the pan. Let the wine reduce by half, about 2-3 minutes.
Step 5: Stir in the chicken broth and heavy cream (if using). Bring the sauce to a gentle simmer and cook for 2-3 minutes until it slightly thickens.
Step 6: Return the seared chicken breasts to the skillet, nestling them into the sauce. Simmer for another 2-3 minutes, or until the chicken is heated through and coated in the rich sauce.
Step 7: Garnish with fresh chopped parsley, if desired, and serve immediately.
Notes
For a lighter version, omit the heavy cream and use extra chicken broth. Chicken thighs can be used instead of breasts but may require a longer cooking time. Add fresh herbs like thyme or rosemary for an aromatic boost.
