Ingredients
1 box (6.9 oz) Chicken flavored Rice-A-Roni
2 tablespoons butter
2 cups water (per box instructions)
2 cups cooked chicken, shredded or diced
1 can (10.5 oz) cream of chicken soup
1/2 cup sour cream
1/2 cup shredded cheddar cheese
1/2 cup crushed Ritz crackers
2 tablespoons butter, melted
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
Step 2: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the rice-vermicelli mix and sauté until golden brown.
Step 3: Slowly add the 2 cups of water and the seasoning packet. Bring to a boil, then reduce heat to low. Cover and simmer for 12-15 minutes, or until the liquid is mostly absorbed but the rice is slightly al dente.
Step 4: In a large mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, and sour cream. Stir until well combined.
Step 5: Transfer the mixture to the prepared baking dish and spread it evenly. Sprinkle the shredded cheddar cheese over the top.
Step 6: In a small bowl, mix the crushed crackers with 2 tablespoons of melted butter. Sprinkle this mixture over the cheese layer.
Step 7: Bake for 25-30 minutes until the casserole is hot and bubbling and the cracker topping is golden brown.
Notes
You can substitute the cream of chicken soup with cream of mushroom for a different flavor profile. Use rotisserie chicken to save time.
