2 1/2 cups (300g) all-purpose flour
1 teaspoon baking soda
1 teaspoon unsweetened cocoa powder (natural, not Dutch-processed)
1/2 teaspoon salt
1 cup (226g) unsalted butter, softened
2 cups (400g) granulated sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
1 ounce (2 tablespoons) red gel food coloring
1 cup (240ml) buttermilk, room temperature
1 teaspoon white vinegar
For the Cream Cheese Frosting:
8 ounces (226g) cream cheese, softened
1/2 cup (113g) unsalted butter, softened
4 cups (480g) powdered sugar, sifted
1 teaspoon vanilla extract
1–2 tablespoons milk or cream (optional, for consistency)
Instructions
Step 1: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. Line the bottoms with parchment paper for easy removal.
Step 2: In a medium bowl, whisk together the all-purpose flour, baking soda, unsweetened cocoa powder, and salt. Set aside.
Step 3: In a large bowl, using an electric mixer, cream together the softened unsalted butter and granulated sugar until light and fluffy, about 3-5 minutes. Scrape down the sides of the bowl as needed.
Step 4: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract and red gel food coloring until the mixture is a uniform vibrant red.
Step 5: In a separate small bowl, whisk together the buttermilk and white vinegar.
Step 6: Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk mixture, beginning and ending with the dry ingredients. Mix on low speed until just combined. Be careful not to overmix.
Step 7: Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
Step 8: Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean. Allow cakes to cool in pans for 10 minutes.
Step 9: Invert cakes onto a wire rack to cool completely. Ensure they are completely cool before frosting.
Step 10: For the frosting, in a large bowl, beat the softened cream cheese and softened unsalted butter with an electric mixer until smooth and creamy.
Step 11: Gradually add the sifted powdered sugar, one cup at a time, mixing on low speed until fully incorporated. Beat in the vanilla extract until the frosting is light, fluffy, and smooth. If needed, add milk or cream to reach desired consistency.
Step 12: Once cakes are completely cool, place one layer on a serving plate. Spread a generous layer of cream cheese frosting over the top. Gently place the second cake layer on top and spread the remaining frosting over the top and sides of the cake.
Step 13: For an optional garnish, crumble a small piece of leftover cake or sprinkle red velvet crumbs on top. Chill the cake for at least 30 minutes before slicing to allow the frosting to set.
Notes
Ensure all ingredients, especially butter, eggs, buttermilk, and cream cheese, are at room temperature for a smooth, well-emulsified batter and frosting. Do not overmix the cake batter once the dry ingredients are added; mix just until combined to keep the cake tender. For the deepest red color, use a high-quality gel food coloring.
