Ingredients
1.5 lbs boneless skinless chicken breasts
2 cups long grain white rice (uncooked)
4 cups chicken broth
1 can (10.5 oz) cream of chicken soup
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper
1 cup frozen peas and carrots
Instructions
Step 1: Place the chicken breasts at the bottom of the crockpot and season with garlic powder, onion powder, salt, and pepper.
Step 2: In a medium bowl, whisk together the chicken broth and cream of chicken soup until smooth.
Step 3: Pour the broth mixture over the chicken, cover, and cook on LOW for 4 hours (or HIGH for 2 hours).
Step 4: Remove the chicken, shred it with two forks, and return it to the crockpot.
Step 5: Stir in the uncooked white rice and frozen peas and carrots. Ensure the rice is fully submerged in the liquid.
Step 6: Cover and cook on HIGH for an additional 30-45 minutes until the rice is tender and has absorbed most of the liquid.
Step 7: Fluff with a fork and serve warm.
Notes
If the rice is still too firm after 45 minutes, add 1/4 cup extra broth and cook for 10 more minutes.
