Golden-brown gluten-free bread loaf baked in a bread machine, sliced on a wooden cutting board

Easy Gluten-Free Bread Machine Loaf

Enjoy a delicious, homemade gluten-free bread loaf with minimal effort using your bread machine. Perfect for sandwiches, toast, or alongside your favorite meal.

  • Total Time: 3 hours 10 minutes
  • Yield: 1 (1.5 lb) loaf (approx. 12 slices) 1x

Ingredients

Scale

1 1/4 cups warm dairy-free milk (e.g., almond or coconut milk, 105-115°F)
2 large eggs, at room temperature (or flaxseed/chia egg substitutes for vegan)
1/4 cup melted vegan butter or olive oil
2 tablespoons granulated sugar
1 1/2 teaspoons salt
3 cups gluten-free bread flour blend (e.g., Pillsbury, or a blend of sorghum, rice, tapioca starch)
2 1/4 teaspoons active dry yeast (1 packet)
Optional: 1/4 cup sunflower seeds or chopped walnuts for texture

Instructions

Step 1: Add the liquid ingredients to your bread machine pan first: warm dairy-free milk, room temperature eggs, and melted vegan butter or olive oil.
Step 2: Next, add the dry ingredients: granulated sugar, salt, and gluten-free bread flour blend.
Step 3: Create a small well in the center of the dry ingredients (do not let it touch the liquid) and add the active dry yeast into the well.
Step 4: Place the bread pan into the bread machine. Select the “Gluten-Free” cycle. If your machine doesn’t have this setting, a “Rapid Rise” or “Basic White Bread” cycle can work, but monitor the dough.
Step 5: If adding optional seeds or nuts, add them during the machine’s mix-in signal, usually about 10-15 minutes into the kneading cycle.
Step 6: Allow the machine to complete the full cycle (approximately 3 hours). Once done, carefully remove the bread pan from the machine.
Step 7: Invert the pan to release the loaf onto a wire rack. Let the bread cool completely (at least 1-2 hours) before slicing. This is crucial for gluten-free bread to set its structure and prevent crumbling.

Notes

For best results, ensure all wet ingredients are at room temperature. Always use fresh yeast. If your bread machine doesn’t have a “gluten-Free” setting, use a “rapid rise” or “basic white bread” setting and monitor the dough, as gluten-free dough requires less kneading and a single rise.
