Homemade Easy Pancake Mix

A simple, make-ahead dry mix that turns into fluffy, delicious pancakes with just a few wet ingredients. Perfect for quick breakfasts!

Ingredients

3 cups all-purpose flour
3 tablespoons granulated sugar
3 tablespoons baking powder (ensure it’s fresh!)
1 teaspoon baking soda
1 teaspoon salt
2 cups Homemade Easy Pancake Mix (for one batch of pancakes)
1 1/2 cups milk (whole milk or buttermilk recommended)
1 large egg
2 tablespoons unsalted butter, melted, or neutral oil (plus extra for greasing griddle)

Instructions

Step 1: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until very well combined. Whisk for at least 2-3 minutes to ensure even distribution of leavening agents.
Step 2: Transfer the dry pancake mix into an airtight container or a large jar. Label with the date and storage instructions. Store in a cool, dry place for up to 3-4 months.
Step 3: To make pancakes from the mix, preheat a griddle or large non-stick frying pan over medium heat. Lightly grease if necessary.
Step 4: In a separate medium-sized bowl, whisk together the milk, egg, and melted butter (or oil) until combined.
Step 5: Add 2 cups of your homemade easy pancake mix to the wet ingredients. Gently mix with a whisk or fork until *just* combined. A few lumps are fine; avoid overmixing.
Step 6: Pour about 1/4 cup of batter per pancake onto the preheated griddle.
Step 7: Cook for 2-3 minutes per side, or until golden brown and bubbles appear on the surface before flipping. Cook the second side for 1-2 minutes until done.
Step 8: Serve immediately with your favorite toppings, or keep warm in a low oven while you cook the remaining batter.

Notes

For best results, ensure your baking powder is fresh. To test its freshness, mix a teaspoon with a tablespoon of hot water; if it bubbles vigorously, it’s good. When mixing the batter, a few lumps are normal and desirable; overmixing leads to tough pancakes.
