2 cans (15 oz each) sliced peaches in light syrup, drained, or 6 cups fresh/frozen peach slices
3/4 cup granulated sugar, divided
1 tablespoon lemon juice (if using fresh or frozen peaches)
1 tablespoon cornstarch (if using fresh or frozen peaches)
1/2 teaspoon ground cinnamon or nutmeg (optional)
1 cup self-rising flour
3/4 cup milk

Instructions

Step 1: Preheat your oven to 375°F (190°C).
Step 2: Pour the melted butter into a 9×13 inch baking dish, ensuring it covers the bottom evenly. Do not spread it up the sides.
Step 3: In a large bowl, combine the peaches, 1/2 cup of the granulated sugar, lemon juice (if using), cornstarch (if using), and cinnamon/nutmeg (if using). Toss gently to coat.
Step 4: In a separate medium bowl, whisk together the self-rising flour, the remaining 1/4 cup granulated sugar, and milk until just combined. Do not overmix; a few lumps are fine.
Step 5: Carefully pour the flour mixture over the melted butter in the baking dish. Do not stir or mix.
Step 6: Spoon the prepared peach mixture evenly over the batter in the baking dish. Do not stir.
Step 7: Bake for 45-55 minutes, or until the topping is golden brown and the peach filling is bubbly and tender.
Step 8: Remove from oven and let cool for at least 10-15 minutes before serving. Serve warm, perhaps with a scoop of vanilla ice cream.

Notes

For best results, use ripe, fragrant peaches if fresh. If using canned peaches, ensure they are well-drained to prevent a watery cobbler. Do NOT stir the layers after assembling them in the baking dish!
