Easy Seitan Teriyaki

A savory, protein-packed vegan stir-fry featuring tender homemade seitan tossed in a glossy, sweet-and-salty teriyaki sauce.

Ingredients

1.5 cups vital wheat gluten
1/4 cup nutritional yeast
1 tsp garlic powder
1/2 cup vegetable broth
1/4 cup soy sauce
2 tbsp maple syrup
1 tbsp grated fresh ginger
2 cloves garlic, minced
1 tbsp cornstarch mixed with 2 tbsp water
1 tbsp sesame oil
Sesame seeds and green onions for garnish

Instructions

Step 1: In a large bowl, whisk together the vital wheat gluten, nutritional yeast, and garlic powder to create the base for your easy seitan teriyaki.
Step 2: Add 1/2 cup of vegetable broth and 2 tablespoons of soy sauce to the dry ingredients. Stir until a dough forms, then knead for about 3 minutes until elastic.
Step 3: Cut the dough into small chunks and simmer in a pot of vegetable broth for 20 minutes, then drain and pat dry for the best easy seitan teriyaki texture.
Step 4: In a small bowl, whisk together the remaining soy sauce, maple syrup, ginger, and minced garlic to make the easy seitan teriyaki glaze.
Step 5: Heat sesame oil in a large skillet over medium-high heat. Add the seitan chunks and sear until golden brown and crispy on all sides.
Step 6: Pour the teriyaki sauce over the seitan in the pan. Add the cornstarch slurry and stir constantly until the sauce thickens and coats each piece of the easy seitan teriyaki.
Step 7: Remove from heat and garnish your easy seitan teriyaki with sesame seeds and sliced green onions before serving.

Notes

For a gluten-free alternative, you must use tofu or tempeh as seitan is made entirely of wheat gluten. Ensure your soy sauce is certified gluten-free (Tamari) if needed for the sauce part.
