Ingredients
4 cups cubed seedless watermelon
2 tablespoons fresh lime juice
1–2 tablespoons honey or maple syrup (optional, depending on fruit sweetness)
Fresh mint leaves for garnish
Instructions
Step 1: Place the cubed watermelon, lime juice, and sweetener into a blender and pulse until completely smooth.
Step 2: Pour the watermelon mixture into a shallow 9×13 inch glass baking dish or a similar wide container.
Step 3: Place the dish in the freezer for about 45 minutes. Remove and use a fork to scrape any ice crystals that have formed around the edges toward the center.
Step 4: Return to the freezer and repeat the scraping process every 30-45 minutes for about 3-4 hours, until the entire mixture has turned into light, fluffy ice crystals.
Step 5: Scoop the granita into chilled glasses, garnish with mint, and serve immediately.
Notes
For the best texture, ensure your freezer is set to its coldest setting. If the granita gets too hard, let it sit at room temperature for a few minutes before scraping again.
