Layers of tender, baked eggplant, rich tomato sauce, and a blend of gooey cheeses create the ultimate comforting Italian-American classic. This recipe skips the deep-frying for a lighter, yet incredibly flavorful dish that’s perfect for a family dinner or special occasion.

2 large eggplants (about 2.5–3 lbs total), peeled and sliced 1/4-inch thick
2 teaspoons salt, plus more for seasoning
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup plain breadcrumbs
1/2 cup grated Parmesan cheese, divided
1/4 cup chopped fresh parsley, divided
1/4 teaspoon black pepper
1/2 cup olive oil, for brushing/pan-frying
3 cups marinara sauce, homemade or good quality store-bought
1 (15-ounce) container ricotta cheese
1 large egg, beaten (for ricotta mixture)
1/4 teaspoon nutmeg
1/2 teaspoon garlic powder
8 ounces fresh mozzarella cheese, thinly sliced or shredded
4 ounces shredded mozzarella cheese (low-moisture, part-skim)

Instructions

Step 1: Begin by peeling your eggplants and slicing them into 1/4-inch thick rounds. Lay them in a single layer on baking sheets lined with paper towels. Sprinkle generously with salt on both sides. Let them sit for at least 30 minutes, or up to an hour. You’ll see beads of moisture form on the surface. This is a good sign! Thoroughly pat the eggplant slices dry with fresh paper towels. This step is crucial for preventing a watery eggplant parmesan and ensures the eggplant holds its shape. You can even place a second layer of paper towels and a cutting board on top to press out even more liquid. The drier the eggplant, the better it will brown and hold its texture.
Step 2: Set up a breading station with three shallow dishes. In the first, place the all-purpose flour. In the second, whisk the two large eggs. In the third, combine the plain breadcrumbs, 1/4 cup grated Parmesan cheese, 2 tablespoons chopped fresh parsley, and black pepper. Mix well. Dredge each eggplant slice first in flour, shaking off excess, then dip into the beaten egg, ensuring it’s fully coated, and finally press into the breadcrumb mixture, coating completely. Gently shake off any loose crumbs. This breading provides a fantastic texture and prevents the eggplant from becoming mushy.
Step 3: For a lighter version, arrange the breaded eggplant slices on baking sheets lined with parchment paper. Drizzle or brush lightly with olive oil. Bake in a preheated oven at 400°F (200°C) for 15-20 minutes, flipping halfway, until golden brown and tender. This method uses less oil and creates a beautifully crisp exterior. Alternatively, for a slightly richer flavor and quicker browning, heat 1/4 cup olive oil in a large skillet over medium-high heat. Pan-fry the eggplant slices in batches for 2-3 minutes per side until golden brown. Add more oil as needed between batches. Transfer cooked eggplant to a plate lined with paper towels to drain excess oil. Whichever method you choose, ensure the eggplant is tender and cooked through before layering in the casserole.
Step 4: In a medium bowl, combine the ricotta cheese, the remaining large beaten egg, nutmeg, garlic powder, and the remaining 2 tablespoons of fresh parsley. Season lightly with salt and pepper. Mix until well combined. This creamy ricotta layer adds moisture, richness, and a subtle sweetness that balances the savory tomato and sharp Parmesan in your eggplant parmesan.
Step 5: Preheat your oven to 375°F (190°C). Spread about 1 cup of marinara sauce evenly over the bottom of a 9×13-inch baking dish. Arrange a single layer of cooked eggplant slices over the sauce, overlapping them slightly if necessary. Spread half of the ricotta mixture over the eggplant, ensuring it’s evenly distributed to get some in every bite. Then top with half of the fresh mozzarella slices, a generous sprinkle of the shredded mozzarella, and some of the remaining Parmesan. Ladle another cup of marinara sauce over this layer.
Step 6: Repeat the layers: a second layer of eggplant, the remaining ricotta mixture, the rest of the fresh mozzarella, more shredded mozzarella, and more Parmesan. Finish with a final layer of eggplant, the remaining marinara sauce, and a generous sprinkle of the remaining shredded mozzarella and Parmesan cheese. Ensure all the eggplant is covered with sauce and cheese to prevent drying out and to create that irresistible golden crust.
Step 7: Cover the baking dish loosely with aluminum foil (you can spray the underside of the foil with non-stick spray to prevent cheese from sticking). Bake for 30 minutes. Remove the foil and bake for an additional 20-25 minutes, or until the top is golden brown and bubbly, and the sauce is simmering at the edges.
