8 oz mascarpone cheese

Instructions
Step 1: In a food processor, pulse the flour, sugar, and cold butter until the mixture resembles coarse crumbs. Add the egg yolk and ice water, pulsing until the dough just begins to come together.
Step 2: Press the dough into a 9-inch tart pan with a removable bottom. Prick the base with a fork and chill in the freezer for 15 minutes.
Step 3: Preheat your oven to 375°F (190°C). Line the chilled tart shell with parchment paper and pie weights. Bake for 15 minutes, then remove the weights and bake for another 10 minutes until golden brown. Let cool completely.
Step 4: In a medium bowl, whip the mascarpone, heavy cream, powdered sugar, and vanilla bean paste until stiff peaks form. Spread the mixture evenly across the cooled tart shell.
Step 5: Arrange the fresh berries over the filling in a dense, natural pattern. Garnish with fresh thyme and edible flowers to complete the enchanted forest look.
Step 6: Refrigerate the tart for at least 1 hour before slicing and serving to allow the filling to set.
Notes
Always use cold butter for the crust to ensure the best texture. If wild berries are available, they add a more authentic woodland flavor.
