1 1/2 cups all-purpose flour

1 egg yolk
8 oz mascarpone cheese
1/2 cup heavy cream
3 tablespoons honey

Instructions
Step 1: Preheat your oven to 350°F (175°C). In a food processor, pulse the flour, sugar, and salt together.
Step 2: Add the cold cubed butter and pulse until the mixture resembles coarse crumbs. Add the egg yolk and pulse until the dough just begins to come together.
Step 3: Press the dough into a 9-inch tart pan with a removable bottom. Prick the base with a fork and bake for 18-20 minutes or until golden brown. Let the crust cool completely.
Step 4: In a medium bowl, whip the mascarpone, heavy cream, honey, and vanilla bean paste until thick and smooth.
Step 5: Spread the mascarpone mixture evenly over the cooled tart crust.
Step 6: Arrange the mixed berries on top in a whimsical, natural pattern to create the ‘enchanted forest’ look.
Step 7: Garnish with fresh herbs and a light dusting of powdered sugar if desired before serving.
Notes
Ensure the crust is completely cool before adding the cream filling to prevent melting.
