1 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 large egg, room temperature
1 tsp vanilla extract
2 1/4 cups all-purpose flour
2 tbsp instant espresso powder
1 tsp baking soda
1/2 tsp sea salt
1 1/2 cups dark chocolate chips or chunks
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
Step 2: In a large bowl or stand mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
Step 3: Add the egg and vanilla extract to the butter mixture and beat until well combined.
Step 4: In a separate medium bowl, whisk together the flour, espresso powder, baking soda, and salt.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Step 6: Fold in the dark chocolate chips or chunks using a spatula.
Step 7: Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them 2 inches apart.
Step 8: Bake for 10-12 minutes, or until the edges are lightly golden. The centers should still look slightly soft.
Step 9: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For the best flavor, use high-quality instant espresso powder rather than regular coffee grounds. Chilling the dough for 30 minutes before baking prevents excess spreading.
