Step 2: Dose your portafilter. For a standard double shot, use about 18-20 grams of ground coffee. Tamp the coffee evenly and firmly with about 30 lbs of pressure. Ensure the surface is perfectly level.
Step 3: Lock the portafilter into your espresso machine. Place a pre-warmed cup or shot glass beneath the spouts. Start the brew cycle. Aim for an extraction time of 25-30 seconds for a double shot (approximately 1.5-2 oz of liquid espresso).
Step 4: Repeat the brewing process for multiple shots until you have accumulated approximately 1 cup (240ml) of espresso. Depending on your machine and desired strength, this could be 4-6 double shots. Each time, ensure you are cleaning and drying your portafilter for optimal results.
Step 5: Allow the freshly brewed espresso to cool completely to room temperature. This prevents rapid thermal shock and preserves its delicate flavors if you plan to store it.
Step 6: Once cooled, transfer the espresso concentrate to an airtight container. Store it in the refrigerator. It will remain fresh for 3-5 days, ready to be used in all your favorite espresso recipes. Remember to label with the date!
