Ingredients
2 oz (60ml) Tequila Blanco (100% agave)
3 oz (90ml) Freshly Squeezed Grapefruit Juice
0.5 oz (15ml) Freshly Squeezed Lime Juice
4–5 oz (120-150ml) Grapefruit Soda (e.g., Jarritos, Squirt) or Sparkling Water + 0.5-1 oz Simple Syrup
Ice
Coarse salt or Tajín, for rim (optional)
Grapefruit wedge/slice or lime wheel, for garnish
Instructions
Step 1: Prepare your glass. If desired, run a lime wedge around the rim of a highball or Collins glass, then dip the rim into coarse salt or Tajín spread on a small plate.
Step 2: Fill the prepared glass generously with ice.
Step 3: Pour 2 ounces of Tequila Blanco into the glass.
Step 4: Add 3 ounces of freshly squeezed grapefruit juice to the glass.
Step 5: Add 0.5 ounces of freshly squeezed lime juice.
Step 6: Top the drink with 4-5 ounces of grapefruit soda. If using sparkling water, add 0.5-1 ounce of simple syrup before topping with sparkling water, adjusting to taste.
Step 7: Gently stir the ingredients together with a bar spoon or long spoon to combine without losing effervescence.
Step 8: Garnish your ‘Everything but the Bartender Paloma’ with a grapefruit wedge or slice, or a lime wheel. Serve immediately and enjoy!
Notes
For the best flavor, use fresh-squeezed grapefruit and lime juice. Adjust sweetness by choosing different grapefruit sodas or by using sparkling water with homemade simple syrup. Don’t be afraid to experiment with different salts for the rim or a splash of Mezcal for a smoky twist on this ‘Everything but the Bartender Paloma’!
