Ingredients
1 1/2 cups all-purpose flour
1/2 cup unsalted butter, cold and cubed
1 tablespoon granulated sugar
1/2 teaspoon salt
4–5 tablespoons ice water
1 pound fresh figs, stemmed and sliced
2 tablespoons honey
1 egg (for egg wash)
1 tablespoon turbinado sugar
Instructions
Step 1: In a large bowl, whisk together flour, sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Step 2: Add ice water one tablespoon at a time, mixing until the dough just begins to hold together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
Step 3: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Step 4: On a floured surface, roll the dough into a 12-inch circle. Carefully transfer the dough to the prepared baking sheet.
Step 5: Arrange the sliced figs in the center of the dough, leaving a 2-inch border. Drizzle the figs with honey.
Step 6: Fold the edges of the dough over the figs, pleating as you go. Brush the crust with beaten egg and sprinkle with turbinado sugar.
Step 7: Bake for 30-35 minutes, or until the crust is golden brown and the figs are tender. Let cool slightly before serving.
Notes
Ensure the butter is very cold for a flaky crust. You can swap honey for maple syrup if desired.
