Ingredients
1 sheet frozen puff pastry, thawed
6–8 ounces fresh figs (Black Mission or Brown Turkey), sliced
5 ounces fresh goat cheese, softened
2 tablespoons honey, plus more for drizzling
1 teaspoon fresh thyme leaves
1 egg, beaten (for egg wash)
1 tablespoon balsamic glaze (optional)
A pinch of sea salt
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Step 2: On a lightly floured surface, roll out the thawed puff pastry into a 10×12 inch rectangle and transfer it to the prepared baking sheet.
Step 3: Using a sharp knife, lightly score a 1-inch border around the edge of the pastry, being careful not to cut all the way through. Prick the center area several times with a fork.
Step 4: In a small bowl, mix the softened goat cheese with 1 tablespoon of honey until smooth. Spread this mixture evenly within the scored border of the pastry.
Step 5: Arrange the sliced figs on top of the goat cheese in slightly overlapping rows.
Step 6: Drizzle the remaining tablespoon of honey over the figs and sprinkle with fresh thyme leaves and a pinch of sea salt.
Step 7: Brush the outer border of the pastry with the beaten egg wash to ensure a golden, glossy finish.
Step 8: Bake for 20-25 minutes, or until the pastry is puffed and golden brown and the figs are soft and caramelized.
Step 9: Remove from the oven and allow to cool slightly. Drizzle with balsamic glaze if desired before slicing and serving.
Notes
Ensure the puff pastry is cold when it goes into the oven for the best rise. If using very ripe figs, reduce the honey drizzle slightly to avoid excess liquid.
