Firecracker Ground Chicken Bowl

An incredibly flavorful, spicy, and sweet firecracker ground chicken bowl that comes together in minutes, perfect for a quick weeknight dinner or healthy meal prep.

Ingredients

1 tbsp neutral oil (like canola or vegetable oil)
1 lb lean ground chicken
¼ cup soy sauce (or tamari for gluten-free)
2–4 tbsp Sriracha or chili garlic sauce (adjust to taste)
2 tbsp rice vinegar
1 tbsp honey or maple syrup
1 tsp sesame oil
2 cloves garlic, minced
Cooked rice, quinoa, or cauliflower rice for serving
2 green onions, sliced, for garnish
1 tsp sesame seeds, for garnish

Instructions

Step 1: Prepare the Firecracker Sauce. In a small bowl, whisk together the soy sauce, Sriracha/chili garlic sauce (start with 2 tbsp and add more later if you prefer extra heat), rice vinegar, honey/maple syrup, sesame oil, and minced garlic until well combined.
Step 2: Brown the Ground Chicken. Heat the neutral oil in a large skillet or wok over medium-high heat. Add the ground chicken, breaking it up with a spoon. Cook until the chicken is completely browned and no pink remains, about 5-7 minutes. Drain any excess fat.
Step 3: Combine with Sauce. Pour the prepared firecracker sauce over the browned chicken in the skillet. Stir well to coat all the chicken. Bring the mixture to a gentle simmer and let it cook for another 3-5 minutes, allowing the sauce to thicken slightly and the flavors to meld beautifully.
Step 4: Serve. Remove from heat. Serve the firecracker ground chicken hot over your choice of cooked rice, quinoa, or cauliflower rice. Garnish generously with sliced green onions and a sprinkle of sesame seeds.

Notes

For extra crunch, sprinkle with chopped peanuts before serving. This recipe is also fantastic when served in lettuce wraps for a low-carb option. Store leftovers in an airtight container for up to 3 days.
