Instructions
Step 1: In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt until well combined.
Step 2: In a separate medium bowl or large measuring jug, whisk the eggs, buttermilk, melted butter, and vanilla extract until smooth.
Step 3: Pour the wet ingredients into the dry ingredients. Use a spatula to gently fold the mixture together until just combined. Remember, a few lumps are fine; do not overmix if you want the fluffiest buttermilk pancakes.
Step 4: Let the batter rest for 10-15 minutes at room temperature.
Step 5: Preheat a non-stick griddle or large skillet over medium-low heat and lightly grease with a small amount of butter.
Step 6: Pour 1/3 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look dry, about 2-3 minutes.
