Ingredients
2 cups crushed chocolate sandwich cookies (about 24 cookies)
5 tablespoons unsalted butter, melted
16 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon peppermint extract
Green gel food coloring
1 cup heavy whipping cream, whipped to stiff peaks
1/2 cup semi-sweet chocolate chips, melted (for hair and facial features)
2 large marshmallows (for eyes)
2 miniature chocolate bars (for bolts)
Instructions
Step 1: Combine the crushed chocolate cookies and melted butter in a bowl. Press the mixture firmly into a 9-inch pie plate to form the crust.
Step 2: Bake the crust at 350°F (175°C) for 10 minutes, then let it cool completely in the refrigerator.
Step 3: In a large bowl, beat the softened cream cheese and powdered sugar until smooth. Stir in the peppermint extract and green food coloring until the desired shade of green is achieved.
Step 4: Gently fold the whipped heavy cream into the green cream cheese mixture until fully combined and fluffy.
Step 5: Spread the filling evenly into the cooled crust and smooth the top with a spatula. Chill for at least 4 hours, or until firm.
Step 6: Once set, use melted chocolate to pipe a jagged ‘hairline’ at the top of the pie. Place marshmallow halves for eyes and add chocolate dots for pupils.
Step 7: Pipe a ‘scar’ on the cheek and insert miniature chocolate bars into the sides of the crust to act as bolts. Serve your frankenstein monster pie chilled.
Notes
For a non-mint version, use vanilla extract and lime juice for a citrus-flavored green filling.
