Ingredients
4–5 large yellow onions (about 3 lbs), thinly sliced
4 tbsp unsalted butter
1 tsp fresh thyme leaves
1 bay leaf
1/2 cup dry white wine (e.g., Sauvignon Blanc, Pinot Grigio)
2 tbsp all-purpose flour
6 cups high-quality beef broth (or vegetable broth for vegetarian)
Salt and freshly ground black pepper to taste
1 baguette, sliced into 1-inch thick rounds
8 oz Gruyère cheese, shredded (about 2 cups)
Instructions
Step 1: Melt 4 tablespoons of unsalted butter in a large, heavy-bottomed pot or Dutch oven over medium-low heat. Add the thinly sliced yellow onions and a generous pinch of salt.
Step 2: Cook the onions very slowly, stirring occasionally, for 45-60 minutes, or until they are deeply golden brown and caramelized. This step is crucial for developing the rich flavor of the soup.
Step 3: Sprinkle 2 tablespoons of all-purpose flour over the caramelized onions and stir continuously for 2 minutes to cook off the raw flour taste, creating a roux.
Step 4: Pour in 1/2 cup of dry white wine and deglaze the pot, scraping up any browned bits from the bottom with a wooden spoon. Let the wine simmer until almost evaporated, about 2-3 minutes.
Step 5: Add 6 cups of high-quality beef broth, 1 teaspoon of fresh thyme leaves, and 1 bay leaf. Season with freshly ground black pepper. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes to allow the flavors to meld.
Step 6: While the soup simmers, preheat your broiler. Arrange the baguette slices on a baking sheet and toast them lightly until golden brown.
Step 7: Carefully remove the bay leaf from the soup. Ladle the hot French onion soup into oven-safe crocks or bowls. Place one or two toasted baguette slices on top of each serving.
Step 8: Generously pile shredded Gruyère cheese over the baguette slices, ensuring the bread is completely covered.
Step 9: Place the crocks on a baking sheet and broil for 2-4 minutes, watching constantly, until the cheese is melted, bubbly, and golden brown. Be careful not to burn the cheese.
Step 10: Carefully remove the crocks from the oven (they will be extremely hot!) and let them cool for a minute or two before serving. Serve immediately and enjoy the classic French onion soup recipe.
Notes
Patience is key for the caramelization of the onions. Do not rush this step, as it forms the foundation of the soup’s flavor. For a richer flavor, you can use a combination of beef broth and a small amount of beef consommé. Always use oven-safe crocks or bowls for broiling the cheese.
