1 loaf (1 pound) challah, brioche, or sturdy French bread, cut into 1-inch cubes (day-old works best)
8 large eggs
2 cups whole milk
1/2 cup heavy cream (or additional milk for a lighter version)
1/2 cup granulated sugar
1/4 cup packed light brown sugar
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
Pinch of nutmeg (optional)
For the Crumb Topping:
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/4 cup (1/2 stick) cold unsalted butter, cut into small pieces
1/2 teaspoon ground cinnamon

Instructions

Step 1: Grease a 9×13 inch baking dish thoroughly with butter. Arrange the bread cubes evenly in the prepared dish.
Step 2: In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, 1/4 cup brown sugar, vanilla extract, and 1 teaspoon ground cinnamon until well combined.
Step 3: Pour the egg mixture evenly over the bread cubes, ensuring all bread is well saturated. Gently press down on the bread to help it absorb the liquid.
Step 4: Cover the baking dish tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight (up to 12 hours).
Step 5: While the casserole chills, prepare the crumb topping. In a medium bowl, combine the all-purpose flour, 1/2 cup brown sugar, cold butter pieces, and 1/2 teaspoon ground cinnamon. Use your fingers or a pastry blender to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
Step 6: When ready to bake, preheat your oven to 375°F (190°C). Remove the casserole from the refrigerator and let it sit at room temperature for about 15-20 minutes.
