8 slices of day-old challah, brioche, or thick-sliced bread (about 1-inch thick)
4 large eggs

1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
Pinch of salt
1–2 tablespoons granulated sugar (optional, for sweeter batter)
2 tablespoons unsalted butter, divided (plus more for cooking)
Instructions
Step 1: In a shallow dish or pie plate, whisk the eggs thoroughly until well beaten and no streaks of egg white remain.
Step 2: Add the milk (or milk and cream), vanilla extract, ground cinnamon, pinch of salt, and optional granulated sugar to the eggs. Whisk until the mixture is completely combined and slightly frothy.
Step 3: Heat a large non-stick griddle or skillet over medium heat. Add 1 teaspoon of butter and swirl to coat the pan as it melts.
Step 4: Dip one slice of bread into the egg mixture, allowing it to soak for 15-20 seconds per side for thicker bread, or 10-15 seconds per side for thinner bread. Ensure both sides are fully coated but not waterlogged.
Step 5: Carefully place the soaked bread onto the hot griddle. Do not overcrowd the pan; cook 2-3 slices at a time depending on your griddle size.

Step 7: Remove cooked french toast from the griddle. If cooking in batches, transfer the cooked slices to a wire rack set over a baking sheet and keep warm in an oven preheated to 200°F (93°C) while you finish the remaining french toast.
Step 8: Repeat steps 3-6, adding more butter to the griddle as needed, until all slices of french toast are cooked.
