Ingredients
12 fresh figs (Black Mission or Brown Turkey)
4 oz soft goat cheese (chèvre)
12 walnut halves
2 tablespoons honey
1 tablespoon fresh thyme leaves
1/4 teaspoon sea salt
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a small baking sheet or dish with parchment paper.
Step 2: Gently wash the fresh figs and pat them dry. Trim the very top of the stems off.
Step 3: Using a sharp knife, cut a cross (X shape) into the top of each fig, cutting about halfway down into the fruit.
Step 4: Use your thumb and forefinger to gently squeeze the bottom of the fig to make the top ‘bloom’ open.
Step 5: Place approximately 1 teaspoon of goat cheese into the center of each opened fig.
Step 6: Press a walnut half into the center of the goat cheese in each fig.
Step 7: Arrange the figs in the baking dish and drizzle the honey evenly over the tops.
Step 8: Sprinkle with fresh thyme leaves and a tiny pinch of sea salt.
Step 9: Roast in the oven for 10-12 minutes until the figs are soft and the honey is bubbly.
Step 10: Serve warm as an appetizer or over a salad.
Notes
Ensure figs are ripe but not mushy. You can swap walnuts for pecans if preferred.
