Ingredients
1 teaspoon ceremonial grade matcha powder
2 ounces hot water (175°F/80°C)
4 ounces fresh pineapple juice
6–8 fresh mint leaves
1/2 ounce fresh lime juice
1 teaspoon honey or agave syrup (optional)
Ice cubes
Sparkling water (optional topper)
Pineapple wedge and mint sprig for garnish
Instructions
Step 1: Sift the matcha powder into a small bowl to remove lumps, then add 2 ounces of hot water and whisk vigorously in a zigzag motion until frothy.
Step 2: In a cocktail shaker, lightly muddle the fresh mint leaves with the lime juice and honey (if using) to release the mint oils.
Step 3: Add the pineapple juice and a handful of ice to the shaker, then shake well for 15 seconds until chilled.
Step 4: Strain the pineapple-mint mixture into a glass filled with fresh ice.
Step 5: Slowly pour the whisked matcha over the back of a spoon onto the top of the drink to create a layered effect.
Step 6: Garnish with a fresh mint sprig and a pineapple wedge before serving your fresh matcha mocktail pineapple mint.
Notes
Always use water that is just below boiling (around 175°F) for the matcha to avoid a burnt, bitter taste. For a clearer drink, double-strain the pineapple mixture.
