Grilled Peach and Burrata Salad with Balsamic Glaze

Ingredients

4 ripe but firm peaches, halved and pitted
2 tablespoons olive oil, divided, plus more for drizzling
Salt and freshly ground black pepper, to taste
8 ounces (225g) fresh burrata cheese, torn into pieces
1/2 cup fresh basil leaves, torn or roughly chopped
1/4 cup balsamic glaze (store-bought or homemade)
Optional: 4 cups fresh arugula or mixed greens

Instructions

Step 1: Preheat your grill or grill pan to medium-high heat. While it heats, gently wash your peaches, then cut them in half and remove the pits.
Step 2: Lightly brush the cut sides of the peach halves with 1 tablespoon of olive oil. Season them lightly with salt and pepper.
Step 3: Place the peaches, cut-side down, on the preheated grill. Grill for 3-5 minutes, or until prominent grill marks appear and the peaches begin to soften and caramelize.
Step 4: Flip the peaches to the skin side and grill for another 2-3 minutes, just to warm them through. Remove from the grill and let cool slightly.
Step 5: If using, arrange the arugula or mixed greens on a large serving platter or individual plates.
Step 6: Artfully arrange the grilled peach halves and torn burrata pieces over the greens.
Step 7: Scatter the fresh basil leaves generously over the salad.
Step 8: Drizzle the remaining 1 tablespoon of olive oil over the salad, followed by a generous drizzle of balsamic glaze.
Step 9: Finish with a fresh crack of black pepper. Serve immediately and enjoy!

Notes

For best results, use ripe but firm peaches that hold their shape on the grill. If you don’t have a grill, a cast-iron grill pan works perfectly. Homemade balsamic glaze can be made by simmering 1 cup of balsamic vinegar until reduced by half and thickened.
