Ingredients
1 (15-ounce) can chickpeas, rinsed and dried
1 tablespoon olive oil (for chickpeas)
½ teaspoon smoked paprika
¼ teaspoon garlic powder
Pinch of salt and black pepper (for chickpeas)
5–6 cups super greens blend (spinach, kale, chard, arugula)
½ cup sliced cucumber
½ cup cherry tomatoes, halved
¼ cup thinly sliced red onion
For the Lemon-Tahini Dressing:
¼ cup tahini
3 tablespoons fresh lemon juice
1 tablespoon extra virgin olive oil
1 teaspoon maple syrup or honey
1 small garlic clove, minced
¼ teaspoon salt
2–4 tablespoons cold water (as needed for consistency)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2: Drain and thoroughly rinse the chickpeas. Pat them completely dry with paper towels.
Step 3: In a medium bowl, toss the dried chickpeas with 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
Step 4: Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Roast for 20-25 minutes, stirring halfway through, until golden and crunchy. Let them cool slightly.
Step 5: While chickpeas roast, prepare the dressing. In a small bowl, whisk together tahini, lemon juice, extra virgin olive oil, maple syrup, minced garlic, and ¼ teaspoon salt.
Step 6: Gradually add 2-4 tablespoons of cold water to the dressing, whisking continuously, until it reaches a smooth, creamy, and pourable consistency.
Step 7: In a large salad bowl, combine the super greens blend, sliced cucumber, cherry tomatoes, and red onion.
Step 8: Drizzle about half of the lemon-tahini dressing over the greens and vegetables. Toss gently to coat everything evenly. Add more dressing if desired.
Step 9: Just before serving, sprinkle the crunchy chickpeas generously over the salad.
Step 10: Serve immediately and enjoy your fresh super greens salad crunchy chickpeas!
Notes
For extra flavor, try adding a pinch of chili flakes or sumac to your crunchy chickpeas before roasting. Leftover dressing can be stored in an airtight container in the fridge for up to 5 days.
