Classic Crispy Southern Fried Okra Recipe

Unlock the secrets to the perfect, non-slimy Southern fried okra recipe! This guide ensures every piece is golden, crunchy, and packed with traditional flavor, making it the ultimate side dish.

  • Total Time: 30 minutes
  • Yield: 4-6 servings 1x

Ingredients

Scale

1 lb fresh okra, washed and thoroughly dried
1/2 cup buttermilk
1/2 cup yellow cornmeal (fine or medium grind)
1/4 cup all-purpose flour
1 teaspoon salt, plus more for seasoning after frying
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon cayenne pepper (optional, for a kick)
3–4 cups vegetable oil, peanut oil, or canola oil, for frying

Instructions

Step 1: Wash the fresh okra thoroughly and pat completely dry. Trim off the stem ends and slice the okra into 1/2-inch thick rounds.
Step 2: In a medium bowl, combine the sliced okra with the buttermilk. Stir to ensure all pieces are coated, then let sit for 10-15 minutes.
Step 3: In a separate shallow dish or large Ziploc bag, whisk together the cornmeal, flour, 1 teaspoon salt, black pepper, garlic powder, onion powder, and cayenne pepper (if using).
Step 4: Working in batches, remove okra from buttermilk, letting excess drip off, and transfer to the cornmeal mixture. Toss or shake vigorously until thoroughly coated. Gently press the coating onto the okra.
Step 5: Heat 2 inches of oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat to 350-375°F (175-190°C).
Step 6: Carefully add a single layer of coated okra to the hot oil. Fry for 3-5 minutes, turning occasionally, until golden brown and crispy.
Step 7: Remove fried okra with a slotted spoon and place on a paper-towel-lined plate to drain. Immediately sprinkle with a little extra salt.
Step 8: Repeat steps 6 and 7 with the remaining okra, ensuring the oil returns to the proper temperature between batches.

Notes

For best results, always use fresh, firm okra. Do not overcrowd the frying pan; cook in small batches to maintain oil temperature and achieve maximum crispiness. Season immediately after frying while hot.
