Ingredients
3 cups cooked cold day-old rice (preferably medium or long grain)
2 tablespoons vegetable oil (or canola, peanut oil), divided
2 large eggs, lightly beaten
1/2 cup diced onion
1/2 cup diced carrots
1/2 cup frozen peas
1/2 cup frozen corn
2 cloves garlic, minced
1 teaspoon grated fresh ginger (optional)
3–4 tablespoons soy sauce (or tamari for gluten-free)
1 teaspoon sesame oil
Salt and black pepper to taste
Optional: 1 cup cooked protein (chicken, shrimp, tofu), diced green onions for garnish
Instructions
Step 1: Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Once hot, pour in the beaten eggs. Scramble them until fully cooked, then remove from the pan and set aside. Chop into small pieces if desired.
Step 2: Add the remaining 1 tablespoon of vegetable oil to the hot wok/skillet. Add the diced onion and carrots, and stir-fry for 2-3 minutes until slightly softened.
Step 3: Add the frozen peas and corn to the pan, along with the minced garlic and grated ginger (if using). Stir-fry for another 1-2 minutes until fragrant.
Step 4: Push the vegetables to one side of the wok. Add the cold day-old rice to the empty side, breaking up any clumps with your spatula. Let the rice sit undisturbed for 1 minute to get a slight char, then mix it with the vegetables.
Step 5: If using, add your cooked protein (chicken, shrimp, tofu) to the pan and mix well.
Step 6: Pour the soy sauce evenly over the rice and vegetables. Stir-fry constantly for 2-3 minutes, ensuring the soy sauce coats all the ingredients. The high heat is crucial for a good fried rice recipe.
Step 7: Return the scrambled egg pieces to the pan. Drizzle with sesame oil. Taste and season with salt and pepper as needed. Stir-fry for another minute to combine everything.
Step 8: Remove from heat. Garnish with chopped green onions, if desired. Serve your delicious fried rice recipe immediately and enjoy!
Notes
For best results, use a wok or a large, heavy-bottomed skillet that can handle high heat. Don’t overcrowd the pan; cook in batches if necessary to ensure even frying and prevent steaming. Adjust soy sauce to your taste, and remember to use cold, day-old rice!
