1 (8 ounce) package cream cheese, softened
1/2 cup unsalted butter, softened
1 teaspoon vanilla extract
34 cups powdered sugar, sifted
45 cups assorted fresh fruit (strawberries, blueberries, kiwi, mandarin oranges, grapes, raspberries), washed and dried

Instructions

Step 1: Preheat your oven to 350°F (175°C). Lightly grease a 12-inch round pizza pan or line with parchment paper.
Step 2: Press the sugar cookie dough evenly onto the prepared pizza pan, forming a consistent circle. Make sure the edges are slightly thicker to create a nice crust.
Step 3: Bake for 12-15 minutes, or until the edges are lightly golden brown and the center is set. Allow the cookie crust to cool completely on a wire rack.
Step 4: In a medium bowl, beat the softened cream cheese and unsalted butter together with an electric mixer until smooth and creamy, about 2-3 minutes.
Step 5: Gradually add the powdered sugar, one cup at a time, beating until fully incorporated after each addition. Scrape down the sides of the bowl as needed. Continue to beat until the frosting is light and fluffy.
Step 6: Beat in the vanilla extract until just combined. Taste and adjust sweetness if desired.
Step 7: Once the cookie crust is completely cool, spread the cream cheese frosting evenly over the top, leaving about a half-inch border around the edge.
Step 8: Arrange your washed, dried, and prepared fresh fruit decoratively over the frosting.
Step 9: Serve immediately, or refrigerate until ready to serve. Store any leftovers in an airtight container in the refrigerator.

Notes

Ensure the cookie crust is completely cool before adding the frosting, otherwise, it will melt. For best results, use fresh, seasonal fruits that are ripe and sweet.
