1/3 cup high-quality cocoa powder (Dutch-processed preferred)
1 tablespoon cornstarch
1/8 teaspoon salt
2 1/2 cups whole milk
1/2 cup heavy cream
1 teaspoon pure vanilla extract
Instructions
Step 1: In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt until no lumps remain.
Step 2: Gradually whisk in 1/2 cup of the milk to form a smooth paste, then slowly add the remaining milk and heavy cream.
Step 3: Place the pan over medium heat and cook, whisking constantly, until the mixture comes to a gentle simmer and thickens slightly (about 5-8 minutes).
Step 4: Remove from heat and stir in the vanilla extract. Let the mixture cool for about 20 minutes.
Step 5: Pour the chocolate mixture into popsicle molds, insert sticks, and freeze for at least 6 hours or until completely firm.
Notes
For a dairy-free version, use full-fat canned coconut milk in place of the milk and cream. Ensure the cornstarch is fully dissolved before heating to prevent lumps.
