Ingredients
30 oz frozen shredded hash browns, thawed
2 cups sour cream
1 can (10.5 oz) condensed cream of chicken soup
1/2 cup salted butter, melted
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups sharp cheddar cheese, shredded
2 cups cornflakes, crushed
2 tablespoons butter, melted (for topping)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
Step 2: In a large bowl, whisk together 1/2 cup melted butter, sour cream, cream of chicken soup, onion powder, salt, and pepper until smooth.
Step 3: Fold in the thawed hash browns and shredded cheddar cheese until well combined.
Step 4: Spread the potato mixture evenly into the prepared baking dish.
Step 5: In a small bowl, toss the crushed cornflakes with the 2 tablespoons of melted butter.
Step 6: Sprinkle the cornflake mixture evenly over the top of the potatoes.
Step 7: Bake for 45-50 minutes, or until the casserole is bubbly and the topping is golden brown.
Step 8: Let the dish rest for 5-10 minutes before serving to allow the sauce to set.
