Ingredients
14 oz (400g) paneer, cut into 1-inch cubes
1 large head of broccoli (about 1.5 lbs / 680g), cut into 1-1.5 inch florets
3 tbsp olive oil
2 tbsp garam masala
1 tsp ground turmeric
1 tsp minced fresh ginger
1 tsp minced garlic
1/2 tsp salt, or to taste
1/4 tsp black pepper, or to taste
1 tbsp fresh lemon juice
2 tbsp fresh cilantro, chopped (for garnish)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Step 2: In a large mixing bowl, whisk together the olive oil, garam masala, ground turmeric, minced ginger, minced garlic, salt, and black pepper until well combined.
Step 3: Add the cubed paneer and broccoli florets to the bowl. Toss gently but thoroughly until all the paneer and broccoli are evenly coated with the spice mixture.
Step 4: Spread the coated paneer and broccoli in a single layer on the prepared baking sheet. Ensure not to overcrowd the tray; use two trays if necessary to allow for proper roasting and browning.
Step 5: Roast for 20-25 minutes, flipping the paneer and broccoli halfway through. Continue roasting until the paneer is golden brown and slightly crispy, and the broccoli is tender-crisp with some charred edges.
Step 6: Remove the tray from the oven. Squeeze fresh lemon juice over the hot paneer and broccoli. Garnish with fresh chopped cilantro before serving.
Step 7: Serve hot with your choice of rice, naan, or a simple raita. Enjoy your delicious Garam Masala Paneer & Broccoli Traybake!
Notes
For best results, ensure the paneer and broccoli are in a single layer on the baking sheet to roast evenly and get crispy. If you prefer spicier, add a pinch of cayenne pepper to the marinade. This dish reheats well and is great for meal prep!
