4 bone-in, skin-on chicken thighs
4 tablespoons unsalted butter
6 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
2 sprigs fresh rosemary or thyme
Instructions
Step 1: Pat the chicken thighs completely dry with paper towels to ensure a crispy skin.
Step 2: Season both sides of the chicken generously with salt, pepper, and paprika.
Step 3: Heat olive oil in a large cast-iron skillet over medium-high heat.
Step 4: Place chicken skin-side down in the pan and sear for 6-8 minutes until golden and crispy.
Step 5: Flip the chicken and cook for another 5 minutes.
Step 6: Reduce heat to medium-low. Add butter, minced garlic, and fresh herbs to the pan.
Step 7: Once the butter is foaming, use a spoon to continuously baste the chicken with the garlic butter for 3-4 minutes until cooked through.
Step 8: Remove from heat and let rest for 5 minutes before serving.
Notes
Always use fresh garlic for the best flavor profile. If the butter starts to burn, lower the heat immediately.
