Ingredients
12 oz Pasta (Penne, Fusilli, or Rotini)
1 lb Italian Sausage (mild or hot), casings removed
4 tbsp Unsalted Butter
6 cloves Garlic, thinly sliced
1/2 tsp Red Pepper Flakes
1/2 cup Grated Parmesan Cheese
1/4 cup Fresh Parsley, chopped
Salt and Black Pepper to taste
1/2 cup Reserved Pasta Water
Instructions
Step 1: Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
Step 2: While pasta is cooking, heat a large skillet over medium-high heat. Add the sausage and cook, breaking it into small crumbles, until browned and cooked through (about 5-7 minutes).
Step 3: Remove the sausage from the skillet and set aside. Reduce heat to medium-low and add the butter to the same skillet.
Step 4: Add the sliced garlic and red pepper flakes to the melted butter. Sauté for 1-2 minutes until the garlic is fragrant and golden, being careful not to burn it.
Step 5: Add the cooked pasta and sausage back into the skillet. Pour in the reserved pasta water and toss everything together to create a light, glossy sauce.
Step 6: Remove from heat. Stir in the Parmesan cheese and fresh parsley. Season with salt and pepper to taste and serve immediately.
Notes
For a healthier version, use whole wheat pasta and turkey sausage. Always use fresh garlic for the best flavor profile.
