1 pound sirloin or ribeye steak, cut into 1-inch cubes
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 cup heavy cream or sour cream
Optional: Fresh parsley or chives, chopped, for garnish
Instructions
Step 1: Pat the steak cubes dry with paper towels. Season generously with salt and pepper, ensuring all sides are coated.
Step 2: Heat olive oil in a large, heavy-bottomed skillet over medium-high heat until shimmering. Add steak bites in a single layer (cook in batches if necessary to avoid overcrowding). Sear for 2-3 minutes per side until a brown crust forms and steak reaches desired doneness.
Step 3: Reduce heat to medium. Add butter and minced garlic to the pan with the steak. Stir constantly for about 1 minute, allowing garlic to become fragrant and butter to melt and coat the steak. Be careful not to burn the garlic.
Step 4: In a small separate bowl, whisk together the heavy cream (or sour cream) with a pinch of salt and pepper. Stir in fresh herbs, if using.
Step 5: Transfer the garlic butter steak bites to a serving platter. Drizzle generously with the creamy sauce, and garnish with additional fresh herbs if desired. Serve immediately while hot and enjoy!
Notes
