Ingredients
1.5 lbs boneless skinless chicken breasts, sliced into thin strips
4 medium zucchinis, spiralized into noodles
5 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons olive oil
2 tablespoons soy sauce (or coconut aminos for paleo/GF)
1 teaspoon toasted sesame oil
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
Sliced green onions and sesame seeds for garnish
Instructions
Step 1: Prepare the zucchini noodles using a spiralizer. Place them on paper towels and lightly salt them; let sit for 10 minutes to draw out moisture, then pat dry.
Step 2: In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Season chicken strips with salt and pepper.
Step 3: Add the chicken to the hot skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.
Step 4: Add the remaining tablespoon of olive oil to the same skillet. Add the minced garlic, grated ginger, and red pepper flakes. Sauté for 30-60 seconds until fragrant.
Step 5: Add the zucchini noodles to the skillet. Toss frequently for 2 minutes to slightly soften them without letting them become mushy.
Step 6: Return the chicken to the skillet. Pour in the soy sauce and toasted sesame oil. Toss everything together for another minute until well combined and heated through.
Step 7: Remove from heat immediately. Garnish with green onions and sesame seeds, and serve your garlic chicken zucchini noodles stir fry hot.
Notes
Do not overcook the zucchini noodles or they will release too much water. Two minutes is usually plenty of time.
