Ingredients
1 lb cremini mushrooms, sliced
1 medium head of cauliflower, cut into small florets
4 cloves garlic, minced
2 tbsp unsalted butter
1 tbsp extra virgin olive oil
1 tsp dried thyme
2 tbsp fresh parsley, chopped
1/2 tsp salt
1/4 tsp black pepper
1 tsp lemon juice
Instructions
Step 1: Clean the mushrooms with a damp cloth and slice them; cut the cauliflower into small, uniform florets to ensure even cooking.
Step 2: In a large skillet over medium-high heat, melt the butter and add the olive oil to prevent burning.
Step 3: Add the sliced mushrooms to the skillet in a single layer and cook undisturbed for 4 minutes until they are golden brown, then flip and cook for 2 more minutes.
Step 4: Add the cauliflower florets, salt, pepper, and thyme to the skillet. Stir occasionally and cook for 7-8 minutes until the cauliflower is tender-crisp and browned.
Step 5: Stir in the minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and toss with fresh parsley and lemon juice before serving.
Notes
Ensure the skillet is hot before adding mushrooms to get a good sear. Do not overcrowd the pan or the vegetables will steam instead of browning.
